Ingredients: 1 thick slice of dry bread, 6 tablespoons of extra virgin olive oil, 4 tablespoons of vinegar, some salt and black pepper, 1 tablespoon of paprika or Spanish paprika, 600 grams of canned tomato juice.

1 red onion, 4 large garlic cloves, 1 cucumber. 1 medium red, yellow and green bell pepper, 1 fresh or dried red pepper, 6 large mint leaves, 300ml ice water, some ice cubes.

Garnish: 1 clove of garlic, drizzle of olive oil, 3 croutons for croutons.

1. Peel the dry bread and put it in a food processor to make crumbs.

2. Put the olive oil in a large bowl, add the vinegar and salt, and whisk until smooth. Add paprika and breadcrumbs and stir until fully combined.

3. Add tomato cubes, stir well, set aside.

4. Peel the onion, garlic and cucumber. Wash the green peppers and chillies, remove the seeds, and cut into 4 pieces.

5. Chop the onion and garlic in a food processor and add to the crumb batter. Chop cucumbers, bell peppers, peppers, etc., and add to the soup.

6. Wash and drain the mint leaves, tear them into pieces, add them to the soup and mix well, add some salt and black pepper to taste.

7. Add an appropriate amount of ice water, stir well, and dilute into thick soup. Set aside to cool, or add ice cubes and serve immediately.

8. Make the croutons: Add a little olive oil to a frying pan, add the garlic and heat over medium heat. Dice the toast and fry until golden brown. Ditch the garlic and serve the croutons with the soup.

Method two:

Ingredients: 3 tomatoes, 1 cucumber, garlic, chili paste, vinegar, salt and pepper to taste, celery leaves for garnish.

1. Peel and slice the cucumber. Cut tomatoes into small pieces.

2. The juicer blends the cucumbers and tomatoes.

3. Add minced garlic and vinegar. Add salt, pepper and chili paste to taste.

4. Cool in a glass. Garnish with celery leaves before serving.
